Skewered Chicken Yakitori


(Yakitori is typically grilled in open fire or charcoal, we will grill using a grilling pan on the cook

top)


Ingredients:

2 lbs chick thighs cut in chuncks for skewer, about 1 incg

1 yellow zucchini, sliced ½ inch thick

1 green zucchini, sliced ½ inch thic

grape tomatoes

I leek, cut in 2 inch pieces

1 tbsp chopped ginger (or ginger paste in a jar)

3 tbsp soy sauce

1 tbsp apple cider vinegar

2 tsp dried Peachy herbs

1 tbsp brown sugar

1 tsp sesame oil

Skewers, bamboo or metal


Directions:

Mix ginger, soy vinegar, herbs, sesame oil and brown sugar in a small bowl, add to chicken

pieces to marinate for 15-20 minutes.


Thread each skewer w chicken alternating with a piece of leek and tomato or zucchini.


Cook on medium heat grilling pan , about 4-5 minute on each dide, basting once or twice.


Serve on top of steamed black or brown rice.
