Peachy’s Health Smart Empanada   

Ingredients

 

2 tbsp coconut or EVOO

2 tsp minced garlic

1 onion chopped

1 lb ground chicken, beef or turkey

4-6 small sweet peppers chopped (comes in red, orange or yellow)

2 tsp dried Peachy Herbs

1 tsp chili powder

1 tsp ground cumin

1 small can tomato sauce of 2 whole ripe tomatoes chopped

1 medium sweet potato, diced small, or russet potato ( I have used left over cooked potatoes

2 whole carrots, chopped

Small bunch green onions, chopped

1 cup frozen peas

1/c cup your favorite shredded cheese (I like sharp cheddar)

Egg wash, to make our final product golden brown

 

Optional ingredients: ½ cup raisins, green or black olives, chopped celery

I have used additional vegetable such as cauliflower,  green beans, asparagus, etc

 

 

Chimichuri Dipping Sauce

 

½ bunch Cilantro

½ bunch Parsley

1 tsp minced garlic

1 small onion

½ cup EVOO

¼ c apple cider vinegar or red wine vinegar (or whatever you have, but not white vinegar)

Salt and pepper to taste

 

Add all ingredients in blender

Blend until fairly smooth
