Ingredients:
2 large chicken breasts (or 6 deboned chicken thighs) cut in 2 inch cubes
A bag of mixed baby sweet peppers
1 cup grape tomatoes
1 cup onions, large dice (or pearl onions)
Skewers
Marinade
1 cup plain fat free yougurt
2 tbsp lime juice (may substitute with lemon juice)
2 tsp minced garlic
1 tbsp olive oil
1 tsp ginger, grated
1 tsp dried Peachy herbs
½ tsp cumin
½ tsp coriander
½ tsp paprika
Directions:
In a large bowl, wisk together all marinade ingredients.
Add chicken and marinate for 10 minutes.
Put chicken pieces alternating with 1 tomato, onion and sweet pepper on a skewer.
Ways to cook kabobs:
1)Broil in the oven:
Preheat oven to 400 degrees.
Put kabobs in a pan, on top of a broiler rack.
Broil 1 side for 5 minutes, brush with marinade then turn.
Broil for 5 minutes, turn and brush again.
Kabobs should be ready in 15-17 minutes.
2)On a cooktop grilling pan:
Spray pan with oil.
Lay kabobs on med-high heat pan. Cook for 5 minutes,
brush with marinade and flip to cook the other side.
Make sure to brush with marinade every time you flip kabobs.
3)Outdoor grill:
Same as 1.
