Ingredients
1 lb chicken thighs, cut in strips
2 tbsp EVOO or coconut oil
1 onion, chopped
3 tsp garlic, minced
1 tsp ginger minced
2 carrots, diced
2 celery stalks, diced
2 stalks lemon grass (separate leafy part from stalk part, chop up the stalk part)
2 tsp dried Peachy herbs
2 rolls qlass or rice noodles (about 4 oz weight)
Salt and pepper to taste
Chopped green onions
3 to 4 cups stock or water
Directions
Heat oil in a soup pot, add ginger, garlic, chopped lemon grass and onions, saute for 2-3 minutes.
Add chicken pieces, cook for anothe 5 minutes.
Add water or broth and leafy part of lemon grass, let simmer for 5 minutes.
Season w salt, pepper and dried herbs, add noodles.
Simmer for another 5 minutes or until noodles are soft.
Serve topped chopped green onions.
