Hot and Sour Soup (serves 6-8)
Ingredients
1 lb chicken thighs or breast, sliced thin
2 tbsp oat flour for thickening
1 can bamboo shoots
2 tbsp olive oil
1 large onion, chopped
1tbsp sesame oil
2 eggs beaten, (use 1 yolk only)
2 tbsp soy sauce
1 pack firm tofu, cut in cubes
2 tbsp cider vinegar
1 bunch green onions juice of 1 lemon
1 cup mushrooms, sliced
1 tsp red pepper flakes
1 cup Chinese dried mushrooms, hydrated, sliced
Directions
In a large soup pot, heat 1 tbsp oil. Add onions, sauté for 2 minutes.
Add chicken, cook for about 5 minutes.
Add the rest of the ingredients and seasonings, except eggs and green onions.
Add desired amount of water, about 2-3 cups, let simmer.
Turn heat on medium and let simmer for about 10 minutes.
Add beaten eggs. Turn off heat.
Top with green onions just before serving.
