2 lbs boneless chicken, cut in large cubes
2 tbsp EVOO
1 onion, diced
3 cloves garlic, minced
1 inch ginger, minced
1 red or yellow pepper, diced
4 small red potatoes, diced
2 small parsnips, diced
½ cut fresh parsley, chopped
1 ½ cup tomato sauce (or 1 15 oz can)
2 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp Peachy’s dried Medit herbs
Heat oil in a large skillet, add chicken pieces, cook for 5-7 minutes.
Add ginger, garlic and onions, cook for another 3 minutes.
Add potatoes, parsnips, tomato sauce, Peachy herbs, soy and oyster sauce.
Cover and let simmer for ~10 minutes, or until potatoes are tender.
Add peppers and parsley, cook for another 3 minutes.
Serve w black, brown and red rice.
